On-the-fly menu planning

I didn't really plan a menu over Christmas break. We kept stopping by the grocery store on the way home from something else, so we just stocked up on basics and hoped for the best. I figured something out every night according to what we had laying around. I don't want to do this every week, but it's fun sometimes!

Here's what we had:
  • Broccoli cheese soup (leftover vegan cheese sauce, frozen broccoli, and potatoes)
  • Enchiladas (leftover rice and cheese sauce; tortillas; canned enchilada sauce and refried beans)
  • Frozen pizza (just keeping it real)
  • Cajun leftovers soup (made from about six different leftovers in the fridge: potatoes, gravy, lentil loaf, barbecue sauce, green beans, onion, parsley, and some other veggies)
  • Carrot hot dogs
  • Soup from a mix and berry muffins
  • Broccoli and tofu stir fry over brown rice
  • Pasta puttanesca
  • Veggie burgers
  • Spaghetti and sauce, and bean balls from the freezer
  • Asian vegetable soup (lots of veggies from the fridge and freezer)

  1. I don't like it either [but sometimes it does happen, ha]. Sounds like you did a good job on using what you had.. [so at least you were frugal ---I don't normally manage that well, with out a menu plan.]. Menus sound good.
