Chickpea meringue


My meringue whipped up from aquafaba (chickpea cooking liquid) and sugar turned out very nice.


Because it wasn't made from raw eggs, Pip enjoyed eating the extra. He put his face right in the bowl.


It fell a tiny bit in the oven, but still turned out pretty well, I think, for what it was made from! I used this recipe.

    I hate meringue--does aquafaba taste different from regular egg whites?

    1. It's airier once baked, but I didn't find it that different. I'm looking forward to experimenting with it more.
