One day's food


Here's what we ate on another typical day of plant-based eating. I love the food, and I feel great. While I am occasionally tempted to eat something I oughtn't, I am never tempted to go back to eating the way I used to overall.

Breakfast
Pancakes with blueberry sauce

Snack
Baby: banana

Lunch
Me: Potato rosemary soup (made from leftover baked potatoes), a peach, an apple
Baby: Peanut butter sandwich, apple, soymilk
Tiger Lily: School lunch
Red Chief and Mr. M: Leftover barbecue spaghetti squash sandwiches

Dinner
Vegetable enchiladas
Spanish rice (from a box)
Peanut butter cookies

  1. SOunds yummy ... Does hubby complain about not eating meat? my husband thinks he has to have meat every meal. eeeeh.. lol I like meat, but I can eat potatoes and other veggies just as well.

    1. He doesn't miss it at all. He prefers to eat vegetarian. He does miss cheese sometimes though!
