I harvested a big bowl of mixed greens from the garden this week: Swiss chard (giant and rainbow), spinach (starting to bolt already!), beet greens, and baby kale.
I cruelly forced the kids to choke down some steamed greens before eating their dinner (they call this "eating in sequence," and they hate it). I ate all the rest. They taste so good with a little salt and balsamic vinegar.
I'm looking forward to lots more cooked greens this summer. I know the spinach's days are numbered, but I think the chard and the kale should be able to survive the heat.
