I love spinach, but most recipes call for fresh, which I don't usually have on hand. Frozen spinach is easier to keep around and a lot cheaper. It's easy to work with, and tastes great if you treat it right (no overcooking!).
Here's my take on having plain old spinach for a side dish.
2 10-ounce packages frozen spinach
1 tablespoon olive oil
1 tablespoon minced garlic*
1/2 teaspoon salt
1 tablespoon balsamic vinegar
Thaw spinach and squeeze to remove excess moisture. Heat olive oil in pan and add garlic for just a minute. Add salt, spinach, and vinegar. Sauté gently just until everything is combined and warmed, and any excess moisture has evaporated. Serves 4.
*I used jarred garlic. If you use fresh, you might want to use a little less.
