Easy, meatless seven-layer dip


We love seven-layer dip, and last year I found a recipe that just suits us. I always make it a little differently than specified, though, so I thought I'd write it up the way I make it so it's easier to read.

By the way, this is a great meal to make in the summer: no cooking involved!

Seven-layer dip

In a 9" square pan or similar-sized dish, layer:

Layer 1:
2 cans beans, drained, mashed with:
1/3 cup salsa
1 teaspoon chili powder
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
3/4 teaspoon salt (or to taste, this is how much I use for my home-cooked beans)

Layer 2:
1 cup sour cream

Layer 3:
2 avocados, mashed with
lemon juice (about 2 teaspoons) and
salt (about 1/4 teaspoon)

Layer 4:
2 cups shredded cheese

Layer 5:
1/2 cup salsa

Layer 6:
2 diced tomatoes

Layer 7:
6 green onions, sliced, and
chopped cilantro (optional), and a bit more
shredded cheese (optional)

    What do you eat with this? Chips or Raw vegetables? Just curious..
