Lemony rice pilaf

Last week I needed a quick side to go with dinner. I love lemon, so I found a recipe for lemon rice pilaf. I adapted it to be more compatible with what I had on hand, and here's what I got. It's tasty, and now it's also completely pantry/food storage–friendly.


Lemony rice pilaf

2 tablespoons olive oil
1 1/3 cups white rice
3 cups water
1 tablespoon chicken bouillon powder
1 teaspoon parsley
1/2 teaspoon garlic powder
1/4 teaspoon thyme
1/2 teaspoon lemon extract
2 tablespoons lemon juice

Heat olive oil. Add rice and sauté for a minute or two. Add remaining ingredients except lemon juice. Bring to a boil. Cover tightly and simmer about 20 minutes, until liquid is absorbed. Stir in lemon juice and season to taste with salt, pepper, and additional lemon juice as needed.
