Freezing a meal

I always think of preserving and freezing in terms of pints and quarts, but today I thought in meals instead. We had a few too many garden summer squash and peppers (and one lonely eggplant), so I blanched and froze enough to make our new favorite meal once during the winter.

With any luck, I'll get enough for a few more bags before it gets too cold outside.

  1. This is a great idea, and something that has helped me out a few times! Just to have the labor-intensive part of the meal prep done and in the freezer is such a time saver. Thank you for the link to the recipe; we'll be giving that a try!
