Recently tried recipes


Black bean brownies. We liked these. They don't taste like normal brownies—they dissolve quickly in your mouth and aren't chewy. But Mr. Mordecai is a big fan and I'll certainly be making them again. No, I haven't told the kids yet that they have black beans in them.

Sweet potato waffles with blueberry syrup. The waffles were just fine. I used the pumpkin option and subbed a flax egg for the egg white, skipping the whipping. I also used all white whole wheat flour. I was doubtful about the blueberry syrup when I was adding the molasses, but it actually turned out great and I'll probably make it again. The waffles weren't different enough from what I normally make to merit a re-make unless I have extra pumpkin or sweet potatoes sitting around.

Pop-top peppers. Red Chief saw this in a church magazine and wanted to make it, so we made it together. Everyone enjoyed it, and I think I'll make it again. I used summer squash and carrots for the vegetables, and I used a 15-ounce can of tomato sauce (unwatered) instead of the tomato soup.

Buttermilk soaked pancakes. I'm so glad my mom introduced these to me! They're light and fluffy and a perfect way to use the buttermilk that I recently figured out how to propagate.

Hot salami sandwiches. I made this in the oven instead of the slow cooker, and I used less cheese (which was a mistake). I used no-knead bread, which was too chewy to comfortably eat in a sandwich, even thinly sliced—I should have chosen a softer bread. But we still enjoyed these sandwiches!
