Slow cooker ranch chicken tacos

I'd never had a ranch chicken taco before, but last week I started to crave one. I looked up some recipes, and came up with my own by combining them. Most call for a packet each of taco seasoning and ranch seasoning, but I thought that would be too salty, so I used the seasoning ingredients from my lentil nachos instead of the taco seasoning.

Slow cooker ranch chicken tacos

4 boneless, skinless chicken breast halves
1 packet ranch dressing mix
1 cup salsa
1/4 cup water
1 tablespoon chili powder
1/2 teaspoon paprika
2 teaspoons cumin
1/2 teaspoon oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon cornstarch

Combine all ingredients in slow cooker (4-quart or smaller). Cook on low for about 5 hours. Remove chicken and shred. Return to pot and cook another 30-60 minutes. Serves 6.

We ate ours ours on tortillas with mashed avocado, sour cream, and tomatoes.


  1. That reminds me I have not made my chicken enchiladas for a while. I take cooked shredded chicken, enough sour cream to coat all of it, and cilantro. Mix it all in a big bowl, roll it up in tortillas, put sauce and cheese, and bake. They are awesome.
