The other day when I was making lemon cake in a mug, it occurred to me that pudding in a mug would also be fabulous. Turns out, it's also very easy.
Chocolate pudding in a mug
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons cocoa powder
dash of salt
1/2 cup milk
Whisk together dry ingredients in a mug with a fork. Add a little of the milk and mix well. Add the remaining milk and beat with the fork until completely combined. Microwave in 30-second increments until pudding has thickened (less than 2 minutes), stirring well between.
If you don't want a skin to form on the pudding as it sits, press plastic wrap onto the surface of the pudding. Refrigerate to cool, if you can wait that long. (Pudding will thicken dramatically as it cools, so you might want to reduce cooking time to make it slightly more runny if you're planning to cool it down.)
There you go! Chocolate pudding in under five minutes, with nothing artificial.
