Things to do with lemons


I love having gratuitous lemons lying around, because even just half a lemon can make dinner special. Here are some things I've done lately:
  • Slice up a lemon (just one! more is not better) and roast it with your potatoes, veggies and/or chicken. I like to smush the roasted potatoes in the lemon goop before I eat them. So good!
  • Use the zest and/or juice in something you bake—cake, bread, etc.
  • Put the zest of one lemon and the juice of half in your tomato sauce. Look here for a recipe.
  • Use lemon zest and/or juice in a sauce. I love this Asian dish that uses lemon and orange juice and zest.
  • Slice up a lemon or two, stuff in a jar, and cover with honey, like this. Then add some to  hot water for a nice drink.
  • Or add some lemon juice and honey (about a tablespoon of each) to a cup of hot water and stir. This is our favorite cold medicine.
  • Make lemon sugar—pulse the zest of a lemon with 1/2 cup of sugar in a mini food processor until well combined. 
  • Use thin slices to decorate a frosted lemon cake.
  • Add a lemon to your smoothie (with the peel cut off).
  • Put any extra pieces down the garbage disposal to help it smell good.
