Meatless nachos

Last week we had some meatless nachos, and they were good! We're not vegetarian, but we do try not to eat too much meat, hence my experimentation.

I finally figured out how to make a good lentil taco "meat." It can be made entirely with non-perishable/pantry/food storage ingredients. I also made some nacho cheese sauce, and I served avocado mashed with lemon and salt, salsa, and tomatoes. Sour cream would have been good too! This could be easily adapted for a seven-layer dip as well.


Lentil taco "meat"

3/4 cup lentils
1 tablespoon chili powder
1/2 teaspoon paprika
2 teaspoons cumin
1/2 teaspoon oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon cornstarch

Rinse and sort through lentils. Boil in unsalted water until tender, about 20 minutes. While lentils are cooking, combine remaining ingredients in small bowl. Drain lentils. Add 1/2 cup water and spice mixture; simmer until most of the water is gone, less than 5 minutes.

Nacho cheese sauce

1 tablespoon butter
1/2 tablespoon oil
1 jalapeƱo pepper, seeds and membranes removed, minced
2 tablespoons minced onion
1 tablespoon flour
1 cup milk
2 tablespoons cheese sauce powder* (I get this from my grocery store bulk bins)
1 cup grated cheese

Melt butter in a small saucepan; add oil. Add pepper and onion and cook about 5 minutes. Add flour and cook for a few minutes. Whisk in milk, a little at a time, letting mixture come to a boil between each addition. (If you want this to go faster, microwave your milk first.) Whisk in cheese sauce powder. Whisk in grated cheese. Mixture will thicken as it cools; reheat if you need it thinner.

*You could certainly make this without the cheese powder; I would use a bit more cheese and maybe some dry mustard powder for flavoring.
