Cheesy porridge

Red Chief does not have a sweet tooth. Tiger Lily will eat cookies all day, but Red Chief always knows when he's had enough. In his honor, I've added this savory cheesy porridge to our breakfast repertoire.

Cheesy porridge

3 cups water
1 scant teaspoon salt
3/4 cup quick grits
1–2 cups shredded cheddar cheese

Bring water and salt to a boil. Whisk in grits and turn heat down. Cook over low heat until mixture thickens. Stir in cheese. Serves 4.

  1. We just call this cheese grits, but my kids LOVE it. They'd eat it at least every week if they could. They sometimes like it with a bit of season salt stirred in as well. Delish!
