There are lots of granola recipes out there. This is my cheap version. It's also pretty good, and forgiving if you want to make substitutions. If you can't find wheat germ and wheat bran, you could use two cups of one of them, or two cups of oat bran. Look in the bulk section of your health food store.
I used to make this all the time (pre–Red Chief), and I got out of the habit. We all love granola, though, and I'm trying to re-focus on whole grains in our diet, so here we are. I made it yesterday and I had forgotten how fun it is to make.
7 cups old-fashioned rolled oats
1 cup wheat germ
1 cup wheat bran
1/2 cup brown sugar
1/2 cup oil
1/2 cup honey
1/2 cup water
1 tablespoon vanilla
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
1 cup raisins
1 cup sunflower seeds
1 cup shredded coconut (optional)
- Preheat oven to 275°F.
- Combine oats, wheat bran, and wheat germ.
- Add sugar, oil, honey, water, vanilla, cinnamon, nutmeg, and salt. Mix well.
- Transfer to two large rimmed baking sheets. Bake 45 minutes, stirring every 15 minutes.
- Add nuts and coconut and bake 15 minutes more. Raise temperature to brown if necessary.
- Add raisins.
