Kid food day 3: Sticky chicken drumsticks


My son loved painting the sauce on the chicken with a pastry brush. He also loved eating the chicken with his fingers (stand by with napkins!). We served this with sweet potato fries—cut into sticks, toss with olive oil and chili powder, and roast along with the chicken.

Sticky chicken drumsticks
Adapted from What to Feed Your Toddler by Sara Lewis

3 or 4 chicken drumsticks
1/2 teaspoon canola oil
1 teaspoon soy sauce
1 tablespoon peanut butter
1 tablespoon ketchup

Preheat oven to 400°F. Line a small baking pan with foil. Remove skin from drumsticks and arrange in pan. Mix together remaining ingredients and spread over chicken. Bake for 30 minutes. Wrap "handles" with foil before serving, if desired (ours kept coming off and we gave up on it).

  2. My kids might actually eat this... I made Sesame noodles last night that is a peanut butter soy sauce sauce on noodles, pork and veggies. Mo ate everything but his broccoli. I imagine Red Chief is loving this!

  3. Cooking is such a great activity for kids - a smart mommy to get them involved while they think it is fun. A drumsticks - can't go wrong there!

  4. I'm going to try all these recipes sometime! Thank you so much for sharing. Tonight I just made pancakes from scratch and was surprised how good they tasted. I hope you'll keep doing these recipes on a regular basis. Sometime I'm also going to try your lemon-honey recipe.
