Zucchini-lentil sandwiches

This is a fun, vegetarian sandwich.

Zucchini-lentil sandwiches

2 small zucchini, thinly sliced
1 teaspoon canola oil
1 cup dry lentils, cooked and drained
1/4 teaspoon red pepper flakes
1 8-ounce can tomato sauce
1/2 teaspoon Italian seasoning
8 thin slices mozzarella cheese
4 sandwich buns

Preheat oven to 350 degrees F. Fry zucchini in oil. Add lentils, sauce, and spices. Line each bun with cheese. Fill with zucchini mixture. Wrap sandwiches in foil and bake for 15 minutes.

  1. Thanks for this, Mrs. M. Keep doing these posts on cooking with random dry stuff. I am going to aspire to go to Whole Foods sometime this week to write down the precise names of everything in that bin aisle, and then google recipes here at home.
