This is one of our favorite soups in the colder seasons. I think the original recipe came from Taste of Home magazine several years ago.
Black Bean Soup
1 onion, chopped
6 cloves garlic, chopped
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon chili powder
2 8-ounce cans tomato sauce
2/3 cup black beans, cooked, or 1 15-ounce can black beans
2 cups water
1 teaspoon tomato or chicken bouillon
A few drops of hot pepper sauce
2 tablespoons lime juice
Cook onion and garlic in oil until tender. Add spices and cook for 2 minutes. Add tomato sauce, beans, water, bouillon, and hot pepper sauce. Simmer 15 mintues. Add lime juice.
