How to use green tomatoes part 3: Green tomato spice cake


I was skeptical about this cake, as it packed a whopping four cups of green tomatoes, but surprisingly, it is very good and moist (almost too moist) and I don't think it will go to waste at the rate it is being eaten by all three of us. You know it's good if Red Chief climbs up to the counter to get some and tries to eat it with a table knife.

  2. That's an interesting one!
    I just read yesterday that you can make a pie that's a lot like apple pie with the small hard green tomatoes. You just treat them like apples in an apple pie recipe (though I don't think you have to peel them). They say it's even better than real apple pie.

  4. I have seen another recipe... oh I just saw Bethany's comment. It was an apple pie recipe. My grandma just emailed it to me. Amazing what you can do with green tomatoes!

  5. My grandmother, mom, and sister make green tomato pies. I occasionally make one whenever I have green tomatoes. The recipe I have is similar to an apple pie recipe. To me, it is more delicious than apple!
