I know what you mean! It's so hard to cook or even eat when it's so hot outside in the summertime. Maybe pasta salad with lots of veggies or sandwiches like this one http://thepioneerwoman.com/cooking/2008/07/cool-crisp-and-delicious-veggie-cheese-bagel/Or something like couscous with grilled chicken chunks? Bacon, Lettuce, and Tomato? Breakfast for dinner, like waffles with ice cream (I realize that's low on the nutrition, but you could make it frozen yogurt and make sure to include fresh fruit)?Those are just some of the solutions I try or my mom would serve, when it's so hot, you're not even hungry.
When we get into a dinner rut we usually mix things up by having breakfast for dinner. Eggs and home fries or french toast with applesauce are some of our favorites.
We love chicken alfredo. We buy the alfredo generic sauce at Walmart and keep it on hand. Grill chicken, boil noodles, stir in sauce and Yum!
that's what we've been having all week! BLT's are a fav at our house. Plus you can use a tortilla to make them a wrap if you desire. The others are my No-Money meal (the ramen noodle dish) and Easy Huevos Rancheros. We've had all three in the past two weeks. And last resort: Pizza from Papa Murphy's (it's take and bake, and can usually be picked up CHEAP)
I get in ruts all the time. Our standby's are spaghetti and pancakes. Pretty boring I know, but fast and easy.Good luck!*hugs*
Taco salad. Spicy ground beef, corn chips, lettuce, tomato and cucumber chopped up, and grated cheese. Chips forst, then beef, then salad then cheese. Yummy if you add a little sour cream. Its cool, its quick, its tasty, what more could you ask for?

I'm in a rut too! We are so busy lately that I can't think about eating and nothing sound good. Chicken spaghetti is an old standby at our house and is really easy to make.
I'm with you.We start exploring salads and various sandwiches...most use common ingredients, but you just change a thing or two and it's completely different.And there's always waffles...
Our standby's: spaghetti, shrimp stirfry (buy the frozen stirfry and add shrimp), frozen pizza, breakfast for dinner, and Hamburger Helper. Nothing special, but it gets the job done!
I second the breakfast idea. We actually had blueberry pancakes tonight. I also like to make an omelet with veggies in it and toast. Maybe with a smoothie.
Hmmm. I really can't give you any ideas, because I don't know what you have on hand.

I'm really in the same boat right now myself. What I've resorted to lately are chicken wraps. I just season and fry up in a little olive oil a couple boneless, skinless chicken breasts. Then dice them up, and wrap them up in a tortilla with some lettuce, tomato, cheese and ranch dressing. Not too heavy and pretty easy.
I hear you about the dinner rut! It has just been way to hot to cook. We've been eating sandwiches and chips and potato salad a lot. That or I tell my husband to pick up some pizza or chinese. :-)
