Tuesday: Lentil tacos
Wednesday: Lemon-scented quinoa salad
Thursday: Lemon chicken soup
Friday: Chicken ranch tacos
Saturday: Baked pasta casserole
Sunday: Spaghetti with five-minute tomato sauce, salad
Monday: Baked lentils with cheese, lemon-poppyseed scones

  1. Wow, I need to get organized like this! Those tacos sound great! Are you using the rotisserie chicken or home baked? I always see recipes for rotisserie chicken and wonder why I'd spend the extra when there is always leftover chicken after a Sunday where we've had baked chicken.

  3. TJ, I'm using chicken left over from our dinner yesterday. I've never bought a rotisserie chicken; yesterday it took me only fifteen minutes to get it in the oven. Not so hard.
